I loved French toast as a kid, but just don’t seem to have the time these days to indulge in my childhood favourite. Toast and eggs is probably as much cooking as I like to do in the mornings these days. 😛 I didn’t have mascarpone or berries on hand but with a craving to recreate this, I filled my French toast with nutella and sliced banana instead…..and it certainly didn’t disappoint.
Recipe for Nutella and Banana French Toast
Ingredients
4 slices of white bread (or your bread of choice)
3 eggs
1/3 cup of milk
2 heaped tablespoons of nutella (or more if you like!)
1 banana (sliced)
2 tablespoons of melted butter
2 teaspoons of canola oil
Maple syrup for drizzling
Icing Sugar for dusting
Method
Spread nutella on 2 slices of bread, top one slice of bread with your sliced banana and carefully join together to make a sandwich.
Repeat with the remaining bread, nutella and banana.
In a large bowl, crack in your eggs, add your milk and whisk thoroughly.
Carefully lower your sandwich into your milky egg mixture and allow the bread to soak up the eggy mix. Gently turn your sandwich over so the other side absorbs the eggy mixture.
Heat up a frypan over a low heat. Drizzle in 1 tablespoon of melted butter and 1 teaspoon of oil (the oil helps to prevent the butter from burning). Scoop your egg soaked sandwich gently out of its eggy bath and into the frypan. When you see the bottom turning a golden hue, carefully turn your French toast over. Do be patient with this process, ensuring that the flame/heat remains low to allow the bread to crisp up and the egg custard to cook through but also for the nutella to heat up and the bananas to warm through. I turned my French toast over quite a few times to prevent it burning and more importantly to allow the bananas to almost start stewing in the gooey nutella.
Repeat the process with the other sandwich unless you have a large enough frypan to cook both at once! 🙂
Dust with icing sugar and enjoy or take it to another level of decadence and top with more sliced banana and drizzle with maple syrup.

Um… YES PLEASE! This looks fantastic. Although I cook for a houseful, I love that this recipe makes just two sandwiches. It seems perfect for lunch with just my little boys! (Since breakfast is good all day!) 🙂 Can’t wait to try it.

I made this for me and the girls while hubby was at work so didn’t make a big batch….but they’re so decadent, I couldn’t even finish one sandwich!
